I'm wondering if you could have two 3rd tier classes (such as warlock & shaolei master)

Not without editing the save/char files. It is relatively easy to mod in waht classes you want and yes you can have 5 third tier classes if you wanted. Keep in mind though some skills are not given to third tier classes that are to second tier classes(I think).
